Ma La Ji Zhua (spicy Braised Chicken Feet)

Ingredients
- 500g chicken feet
- 2 tbsp Sichuan peppercorns
- 3-4 dried red chilies
- 3 slices of ginger
- 3 cloves of garlic, minced
- 2 green onions, chopped
- 1 tbsp cooking oil
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp sugar
- 1 star anise
- 1 cinnamon stick
- 1 cup water
Instructions
- Blanch the chicken feet in boiling water for 5 minutes, then drain and set aside.
- Heat the cooking oil in a wok or large pot over medium heat. Add the Sichuan peppercorns, dried red chilies, ginger, and garlic. Stir-fry until fragrant.
- Add the blanched chicken feet to the wok, along with the soy sauce, dark soy sauce, Shaoxing wine, sugar, star anise, and cinnamon stick. Stir to coat the chicken feet with the sauce.
- Pour in the water and bring the mixture to a boil. Then reduce the heat to low, cover, and simmer for 1 hour, or until the chicken feet are tender.
- Once the chicken feet are tender, uncover the wok and continue to cook until the sauce has thickened.
- Garnish with chopped green onions before serving.
