Ingredients

  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 3-4 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 2-3 green onions, chopped
  • 1 tablespoon Sichuan peppercorns
  • 2-3 dried red chilies, deseeded and cut into small pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • Salt to taste

Instructions

  1. Marinate the beef slices with soy sauce, Shaoxing wine, sugar, and cornstarch for 15 minutes.
  2. Heat the vegetable oil in a wok or skillet over high heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
  3. Add the garlic, ginger, and green onions, and stir-fry for another minute.
  4. Add the marinated beef slices and stir-fry until they are just cooked through.
  5. Season with salt to taste and serve hot.
