Ingredients
- 1 lb (450g) beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 3-4 garlic cloves, minced
- 1 tablespoon ginger, minced
- 2-3 green onions, chopped
- 1 tablespoon Sichuan peppercorns
- 2-3 dried red chilies, deseeded and cut into small pieces
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- Salt to taste
Instructions
- Marinate the beef slices with soy sauce, Shaoxing wine, sugar, and cornstarch for 15 minutes.
- Heat the vegetable oil in a wok or skillet over high heat. Add the Sichuan peppercorns and dried red chilies, and stir-fry until fragrant.
- Add the garlic, ginger, and green onions, and stir-fry for another minute.
- Add the marinated beef slices and stir-fry until they are just cooked through.
- Season with salt to taste and serve hot.
