Ma La Niu Rou Mian (spicy Beef Noodles)
Ma La Niu Rou Mian, also known as Spicy Beef Noodles, is a popular dish in Anhui Cuisine. This dish features tender beef slices in a spicy and flavorful broth, served with chewy noodles.
Ingredients
- 500g beef, thinly sliced
- 400g fresh noodles
- 4 cups beef broth
- 3 tbsp Sichuan peppercorns
- 2 tbsp chili oil
- 2 tbsp soy sauce
- 1 tbsp cooking wine
- 4 cloves garlic, minced
- 2 green onions, chopped
- 1 inch ginger, sliced
- 1 tsp sugar
- Salt to taste
Instructions
- In a pot, heat the chili oil and Sichuan peppercorns over low heat for 5 minutes to infuse the oil with flavor. Remove the peppercorns and set the oil aside.
- In the same pot, add the garlic, ginger, and green onions. Cook until fragrant.
- Add the beef slices and cook until browned.
- Pour in the cooking wine, soy sauce, and beef broth. Add the sugar and salt. Simmer for 30 minutes.
- Cook the fresh noodles according to package instructions. Drain and set aside.
- To serve, divide the noodles into bowls and ladle the beef and broth over the noodles. Drizzle with the infused chili oil.
