Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons Sichuan peppercorns
  • 1/4 cup vegetable oil
  • 1/4 cup dried red chilies
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup chicken broth

Instructions

  1. In a dry wok, toast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Remove and let cool, then grind into a fine powder.
  2. Heat the vegetable oil in the wok over high heat. Add the dried red chilies and cook until they darken, about 30 seconds.
  3. Add the garlic, ginger, and green onions, and stir-fry for 1 minute.
  4. Add the shrimp, soy sauce, Shaoxing wine, sugar, salt, and ground Sichuan peppercorns. Stir-fry for 2 minutes.
  5. Pour in the chicken broth and cook for another 2 minutes, or until the shrimp are cooked through.
  6. Transfer to a serving dish and serve hot.
