Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons Sichuan peppercorns
- 1/4 cup vegetable oil
- 1/4 cup dried red chilies
- 3 cloves garlic, minced
- 2 tablespoons ginger, minced
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup chicken broth
Instructions
- In a dry wok, toast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Remove and let cool, then grind into a fine powder.
- Heat the vegetable oil in the wok over high heat. Add the dried red chilies and cook until they darken, about 30 seconds.
- Add the garlic, ginger, and green onions, and stir-fry for 1 minute.
- Add the shrimp, soy sauce, Shaoxing wine, sugar, salt, and ground Sichuan peppercorns. Stir-fry for 2 minutes.
- Pour in the chicken broth and cook for another 2 minutes, or until the shrimp are cooked through.
- Transfer to a serving dish and serve hot.
