Ingredients

  • 12 duck wings
  • 1/4 cup soy sauce
  • 1/4 cup Chinese cooking wine
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp chili bean paste
  • 3 slices ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 tbsp sugar
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the Sichuan peppercorns, ginger, and garlic. Stir-fry until fragrant.
  2. Add the duck wings to the pot and brown them on all sides.
  3. Pour in the soy sauce, cooking wine, and chili bean paste. Stir to coat the duck wings.
  4. Add the sugar, green onions, and chicken broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the duck wings are tender.
  5. Season with salt to taste. Serve the spicy braised duck wings hot, garnished with additional green onions if desired.
