Ma Po Dou Fu (ma Po Tofu)

Ingredients

  • 1 block (14 oz) soft tofu, cut into cubes
  • 1/2 lb ground pork
  • 2 tbsp Sichuan peppercorns
  • 3 tbsp Doubanjiang (broad bean paste)
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green onions, chopped
  • 1 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 2 tsp cornstarch
  • 2 tbsp water

Instructions

  1. Heat a wok over high heat and add Sichuan peppercorns. Dry roast for 1-2 minutes until fragrant, then remove and grind into a powder.
  2. Heat oil in the wok and add ground pork, Doubanjiang, garlic, and ginger. Stir-fry until the pork is cooked.
  3. Add the chicken broth, soy sauce, Shaoxing wine, and sugar. Bring to a simmer.
  4. Gently slide the tofu into the wok. Simmer for 5-7 minutes.
  5. Mix cornstarch with water to make a slurry. Stir it into the wok to thicken the sauce.
  6. Sprinkle with the ground Sichuan peppercorns and green onions. Serve hot with steamed rice.
