Ma Po Dou Fu (ma Po Tofu)
Ma Po Dou Fu, also known as Ma Po Tofu, is a famous dish from Huaiyang Cuisine, known for its spicy and flavorful taste. This dish features soft tofu and minced meat cooked in a spicy, savory sauce.
Ingredients
- 1 block (14 oz) soft tofu, cut into cubes
- 1/2 lb ground pork
- 2 tbsp Sichuan peppercorns
- 3 tbsp Doubanjiang (broad bean paste)
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 green onions, chopped
- 1 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 2 tsp cornstarch
- 2 tbsp water
Instructions
- Heat a wok over high heat and add Sichuan peppercorns. Dry roast for 1-2 minutes until fragrant, then remove and grind into a powder.
- Heat oil in the wok and add ground pork, Doubanjiang, garlic, and ginger. Stir-fry until the pork is cooked.
- Add the chicken broth, soy sauce, Shaoxing wine, and sugar. Bring to a simmer.
- Gently slide the tofu into the wok. Simmer for 5-7 minutes.
- Mix cornstarch with water to make a slurry. Stir it into the wok to thicken the sauce.
- Sprinkle with the ground Sichuan peppercorns and green onions. Serve hot with steamed rice.
