Maafe (groundnut Soup)
Maafe, also known as Groundnut Soup, is a popular dish in Cameroonian cuisine. This hearty and flavorful soup is made with a rich peanut butter base and is often served with rice or fufu.
Ingredients
- 1 cup peanut butter
- 2 pounds chicken, cut into pieces
- 1 onion, chopped
- 2 tomatoes, diced
- 1 cup okra, sliced
- 2 cups chicken broth
- 1 teaspoon ground cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken pieces over medium heat.
- Add the chopped onions and cook until translucent.
- Stir in the peanut butter, tomatoes, and okra. Cook for 5 minutes.
- Pour in the chicken broth and season with cayenne pepper, salt, and pepper.
- Simmer for 45 minutes, stirring occasionally, until the chicken is cooked through and the flavors are well combined.
- Serve the Maafe hot with rice or fufu.
