Ingredients

  • 1 cup peanut butter
  • 2 pounds chicken, cut into pieces
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 cup okra, sliced
  • 2 cups chicken broth
  • 1 teaspoon ground cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken pieces over medium heat.
  2. Add the chopped onions and cook until translucent.
  3. Stir in the peanut butter, tomatoes, and okra. Cook for 5 minutes.
  4. Pour in the chicken broth and season with cayenne pepper, salt, and pepper.
  5. Simmer for 45 minutes, stirring occasionally, until the chicken is cooked through and the flavors are well combined.
  6. Serve the Maafe hot with rice or fufu.
