Ingredients
- 2 lbs lamb, cut into chunks
- 1 cup peanut butter
- 1 onion, chopped
- 3 tomatoes, diced
- 2 cups beef broth
- 1/2 cup tomato paste
- 1/2 cup chopped peanuts
- 2 tbsp vegetable oil
- 1 tsp cayenne pepper
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Season the lamb with salt, pepper, cayenne pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat. Add the lamb and brown on all sides, then remove from the pot and set aside.
- In the same pot, sauté the onions until translucent. Add the diced tomatoes and cook until they start to break down.
- Stir in the peanut butter, tomato paste, and beef broth. Return the lamb to the pot and bring the mixture to a simmer.
- Cover and cook over low heat for 1.5 to 2 hours, or until the lamb is tender.
- Garnish with chopped peanuts before serving.
