Maafe Nkukuma (groundnut Spinach Stew)

Ingredients
- 2 lbs chicken, beef, or tofu, cut into pieces
- 1 cup peanut butter
- 2 cups fresh spinach, chopped
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup vegetable oil
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the chicken, beef, or tofu to the pot and brown on all sides.
- Stir in the peanut butter, tomatoes, and broth. Bring the mixture to a simmer and let it cook for 45 minutes, stirring occasionally.
- Add the chopped spinach to the pot and cook for an additional 10 minutes, or until the spinach is wilted and the meat is tender.
- Season with salt and pepper to taste.
- Serve the Maafe Nkukuma hot with rice or fufu.
