Ingredients

  • 2 lbs chicken, beef, or tofu, cut into pieces
  • 1 cup peanut butter
  • 2 cups fresh spinach, chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup vegetable oil
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the chicken, beef, or tofu to the pot and brown on all sides.
  3. Stir in the peanut butter, tomatoes, and broth. Bring the mixture to a simmer and let it cook for 45 minutes, stirring occasionally.
  4. Add the chopped spinach to the pot and cook for an additional 10 minutes, or until the spinach is wilted and the meat is tender.
  5. Season with salt and pepper to taste.
  6. Serve the Maafe Nkukuma hot with rice or fufu.
