Ingredients

  • 1 cup peanut butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 sweet potato, diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 lb chicken or tofu, cubed
  • 1/2 cup okra, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the chicken or tofu to the pot and cook until browned.
  3. Stir in the peanut butter, diced tomatoes, and broth, then bring to a simmer.
  4. Add the sweet potato, carrots, bell pepper, and okra (if using) to the pot, then cover and cook for 30 minutes.
  5. Season with salt and pepper to taste, then simmer for an additional 15 minutes.
  6. Serve the Maafe hot, over rice or with crusty bread.
