Maafe (peanut Butter Soup)
Maafe, also known as Peanut Butter Soup, is a popular dish in Guinean cuisine. This hearty and flavorful soup is made with a rich peanut butter base and a variety of vegetables and protein, creating a delicious and satisfying meal.
Ingredients
- 1 cup peanut butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups chicken or vegetable broth
- 1 sweet potato, diced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 lb chicken or tofu, cubed
- 1/2 cup okra, sliced (optional)
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the chicken or tofu to the pot and cook until browned.
- Stir in the peanut butter, diced tomatoes, and broth, then bring to a simmer.
- Add the sweet potato, carrots, bell pepper, and okra (if using) to the pot, then cover and cook for 30 minutes.
- Season with salt and pepper to taste, then simmer for an additional 15 minutes.
- Serve the Maafe hot, over rice or with crusty bread.
