Maafe (sweet Potato And Peanut Soup)
Maafe, also known as Sweet Potato and Peanut Soup, is a popular dish in Gambian cuisine. This hearty and flavorful soup is perfect for a cozy night in or for entertaining guests.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 cup peanut butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until softened.
- Add the sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the peanut butter, cumin, cayenne pepper, salt, and pepper. Simmer for an additional 15 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Adjust seasoning to taste and serve hot.
