Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 cup peanut butter
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until softened.
  2. Add the sweet potatoes, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in the peanut butter, cumin, cayenne pepper, salt, and pepper. Simmer for an additional 15 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  5. Adjust seasoning to taste and serve hot.
