Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 cup peanut butter
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 sweet potato, peeled and diced
  • 1 cup chicken broth
  • 1/2 cup tomato paste
  • 1/2 cup okra, sliced
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the chicken pieces and brown on all sides.
  4. Stir in the peanut butter, tomato paste, and diced tomatoes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the sweet potato and okra to the pot.
  7. Season with salt and pepper, then cover and let it simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the sweet potatoes are tender.
  8. Serve the Maafe Tiga hot with rice or couscous.
