Maafe Tiga (dakar Delicacy)
Maafe Tiga is a popular Senegalese dish, especially in Dakar. This hearty and flavorful peanut stew is a staple in Senegalese cuisine and is often enjoyed with rice or couscous.
Ingredients
- 2 lbs chicken, cut into pieces
- 1 cup peanut butter
- 1 onion, chopped
- 2 tomatoes, diced
- 1 sweet potato, peeled and diced
- 1 cup chicken broth
- 1/2 cup tomato paste
- 1/2 cup okra, sliced
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until translucent.
- Add the chicken pieces and brown on all sides.
- Stir in the peanut butter, tomato paste, and diced tomatoes.
- Pour in the chicken broth and bring to a simmer.
- Add the sweet potato and okra to the pot.
- Season with salt and pepper, then cover and let it simmer for 45 minutes to 1 hour, or until the chicken is cooked through and the sweet potatoes are tender.
- Serve the Maafe Tiga hot with rice or couscous.
