Macadamia Nut Chicken Stir-Fry (夏威夷果鸡肉炒)

Ingredients

  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1/2 cup (60g) macadamia nuts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup (150g) sugar snap peas
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) oyster sauce
  • 1 tablespoon (15ml) sesame oil
  • 1 tablespoon (15ml) vegetable oil
  • 1 teaspoon (5g) cornstarch
  • 1/2 teaspoon (2.5g) red pepper flakes
  • Cooked rice, for serving

Instructions

  1. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.
  2. Heat the vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry for 3-4 minutes, until browned and cooked through. Remove the chicken from the wok and set aside.
  3. In the same wok, add the macadamia nuts and stir-fry for 1-2 minutes, until lightly toasted. Remove from the wok and set aside with the chicken.
  4. Next, add the bell peppers, sugar snap peas, green onions, and garlic to the wok. Stir-fry for 2-3 minutes, until the vegetables are crisp-tender.
  5. Return the chicken and macadamia nuts to the wok. Pour the sauce over the chicken and vegetables, and stir-fry for another 1-2 minutes, until everything is heated through and coated in the sauce.
  6. Sprinkle with red pepper flakes and toss to combine.
  7. Serve the stir-fry over cooked rice.
