Ingredients
- 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup (60g) macadamia nuts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup (150g) sugar snap peas
- 3 green onions, chopped
- 3 cloves garlic, minced
- 1/4 cup (60ml) soy sauce
- 2 tablespoons (30ml) oyster sauce
- 1 tablespoon (15ml) sesame oil
- 1 tablespoon (15ml) vegetable oil
- 1 teaspoon (5g) cornstarch
- 1/2 teaspoon (2.5g) red pepper flakes
- Cooked rice, for serving
Instructions
- In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry for 3-4 minutes, until browned and cooked through. Remove the chicken from the wok and set aside.
- In the same wok, add the macadamia nuts and stir-fry for 1-2 minutes, until lightly toasted. Remove from the wok and set aside with the chicken.
- Next, add the bell peppers, sugar snap peas, green onions, and garlic to the wok. Stir-fry for 2-3 minutes, until the vegetables are crisp-tender.
- Return the chicken and macadamia nuts to the wok. Pour the sauce over the chicken and vegetables, and stir-fry for another 1-2 minutes, until everything is heated through and coated in the sauce.
- Sprinkle with red pepper flakes and toss to combine.
- Serve the stir-fry over cooked rice.
