Macedonian Ajvar (Ајвар)
Ajvar is a popular Macedonian condiment made from roasted red peppers, eggplant, and garlic. It is a versatile spread that can be enjoyed on bread, crackers, or as a dip for vegetables.
Ingredients
- 4 red bell peppers
- 2 eggplants
- 4 cloves of garlic
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the red peppers and eggplants on a baking sheet and roast for 30-40 minutes, or until the skins are charred.
- Remove the roasted vegetables from the oven and let them cool. Then, peel off the skins and remove the seeds from the peppers.
- In a food processor, combine the roasted vegetables, garlic, olive oil, salt, and pepper. Blend until smooth.
- Transfer the ajvar to a jar and refrigerate for at least 1 hour before serving.
