Macedonian Ajvar (Ајвар)

Ingredients

  • 4 red bell peppers
  • 2 eggplants
  • 4 cloves of garlic
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the red peppers and eggplants on a baking sheet and roast for 30-40 minutes, or until the skins are charred.
  3. Remove the roasted vegetables from the oven and let them cool. Then, peel off the skins and remove the seeds from the peppers.
  4. In a food processor, combine the roasted vegetables, garlic, olive oil, salt, and pepper. Blend until smooth.
  5. Transfer the ajvar to a jar and refrigerate for at least 1 hour before serving.
