Macedonian Cheese Pastry (Македонска сирничка)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup plain yogurt
  • 2 cups crumbled feta cheese
  • 1 egg, beaten

Instructions

  1. In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  2. Stir in the yogurt until the dough starts to come together. Turn the dough out onto a floured surface and knead gently until smooth.
  3. Divide the dough into 12 equal pieces and roll each piece into a ball. Flatten each ball into a circle about 4 inches in diameter.
  4. In a separate bowl, mix the crumbled feta cheese with the beaten egg.
  5. Place a spoonful of the cheese mixture in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal.
  6. Place the sirenje on a baking sheet lined with parchment paper and brush the tops with beaten egg.
  7. Bake in a preheated oven at 375°F (190°C) for 20 minutes or until golden brown.
  8. Remove from the oven and let cool slightly before serving.
