Ingredients
- 2 cups dried white beans
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red pepper, chopped
- 2 tomatoes, diced
- 1/4 cup vegetable oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Soak the dried white beans in water overnight.
- Drain and rinse the beans, then place them in a large pot.
- Add enough water to cover the beans and bring to a boil. Reduce heat and simmer for 30 minutes.
- In a separate pan, sauté the onion, garlic, and red pepper in vegetable oil until softened.
- Add the sautéed vegetables, diced tomatoes, paprika, salt, and pepper to the pot with the beans.
- Cover and simmer for an additional 30 minutes, or until the beans are tender.
- Adjust seasoning if needed and serve hot.
