Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 1/4 cup rice
  • 1/4 cup chopped fresh parsley
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 6 cups beef or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb cubes over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the carrots, potatoes, tomatoes, and red bell pepper.
  4. Add the rice, parsley, paprika, thyme, and oregano. Season with salt and pepper.
  5. Pour in the broth and bring the stew to a boil.
  6. Reduce the heat, cover, and simmer for 2 hours, or until the lamb is tender.
  7. Adjust the seasoning if needed, and serve hot.
