Ingredients

  • 3 red peppers, roasted and peeled
  • 1 eggplant, roasted and peeled
  • 2 tomatoes, roasted and peeled
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Roast the red peppers, eggplant, and tomatoes until the skins are charred. Let them cool, then peel and chop them.
  2. In a pan, heat the olive oil and sauté the chopped onion and garlic until soft.
  3. Add the chopped roasted vegetables to the pan and cook for 10-15 minutes, stirring occasionally.
  4. Season with salt and pepper to taste.
  5. Remove from heat and let it cool before serving.
