Macedonian Pindzur (Пинџур)
Пинџур (Macedonian Pindzur) is a traditional Macedonian spread made with roasted red peppers, eggplant, and tomatoes. It's a versatile dish that can be served as a dip, spread on bread, or as a side dish.
Ingredients
- 3 red peppers, roasted and peeled
- 1 eggplant, roasted and peeled
- 2 tomatoes, roasted and peeled
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Roast the red peppers, eggplant, and tomatoes until the skins are charred. Let them cool, then peel and chop them.
- In a pan, heat the olive oil and sauté the chopped onion and garlic until soft.
- Add the chopped roasted vegetables to the pan and cook for 10-15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove from heat and let it cool before serving.
