Ingredients

  • 1 package of phyllo pastry
  • 2 cups feta cheese
  • 1 cup spinach, chopped
  • 1/2 cup olive oil
  • 1 onion, diced
  • 3 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the feta cheese, spinach, onion, eggs, salt, and pepper.
  3. Brush a baking dish with olive oil.
  4. Layer 4 sheets of phyllo pastry in the bottom of the baking dish, brushing each sheet with olive oil.
  5. Spread half of the cheese and spinach mixture over the phyllo pastry.
  6. Repeat the layering process with the remaining phyllo pastry and cheese mixture.
  7. Bake in the preheated oven for 45 minutes, or until the pita is golden brown and crispy.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
