Macedonian Pumpkin Pie (Македонска тиквешка пита)

Ingredients

  • 500g pumpkin, peeled and cubed
  • 200g feta cheese, crumbled
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 sheets phyllo pastry
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the pumpkin, feta cheese, parsley, cinnamon, nutmeg, salt, and pepper. Mix well.
  3. Brush a 9x13 inch baking dish with melted butter.
  4. Layer 4 sheets of phyllo pastry in the bottom of the baking dish, brushing each sheet with melted butter.
  5. Spoon the pumpkin mixture over the phyllo pastry.
  6. Layer the remaining 4 sheets of phyllo pastry on top of the pumpkin mixture, brushing each sheet with melted butter.
  7. Score the top of the pie into squares or diamonds with a sharp knife.
  8. Bake in the preheated oven for 40 minutes, or until the phyllo pastry is golden brown and crispy.
  9. Allow the pie to cool for a few minutes before slicing and serving.
