Ingredients

  • 1 package of phyllo dough

  • 1 onion, finely chopped
  • 3 eggs, beaten
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the chopped spinach, feta cheese, ricotta cheese, chopped onion, beaten eggs, olive oil, salt, and pepper.
  3. Layer 6 sheets of phyllo dough in a greased baking dish, brushing each sheet with olive oil.
  4. Spread half of the spinach and cheese mixture over the phyllo dough.
  5. Repeat the layering process with the remaining phyllo dough and spinach mixture.
  6. Bake in the preheated oven for 45 minutes, or until the phyllo dough is golden brown and crispy.
