Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or lamb
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground meat, rice, onion, tomatoes, garlic, paprika, oregano, salt, and pepper.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. Place the stuffed peppers in a deep pot and pour the broth over them.
  6. Cover the pot and simmer on the stovetop for 1 hour, or until the peppers are tender and the filling is cooked through.
  7. Serve the Macedonian stuffed peppers hot, with a side of yogurt or a fresh salad.
