Macedonian Tavče Gravče with Pindjur (Makedonski Tavče Gravče s Pindjur)

Ingredients

  • 2 cups dried white beans
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1/2 tsp dried red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Soak the dried white beans in water overnight.
  2. Drain and rinse the beans, then place them in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.
  3. In a separate pan, heat the vegetable oil and sauté the onion, garlic, and bell peppers until softened.
  4. Add the diced tomatoes, paprika, red pepper flakes, salt, and pepper to the pan and cook for an additional 10 minutes.
  5. Once the beans are cooked, drain any excess water and add them to the pan with the vegetable mixture. Stir to combine and cook for an additional 5 minutes.
  6. Remove from heat and serve the Tavče Gravče topped with a dollop of Pindjur.
