Ingredients
- 2 cups dried white beans
- 2 onions, chopped
- 2 red bell peppers, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon paprika
- 1 teaspoon dried red pepper flakes
- Salt and pepper to taste
Instructions
- Soak the beans in water overnight.
- Drain the beans and place them in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 1 hour, or until the beans are tender.
- In a separate pan, heat the vegetable oil and sauté the onions, peppers, and garlic until softened.
- Add the tomatoes, paprika, red pepper flakes, salt, and pepper to the pan. Cook for an additional 5 minutes.
- Combine the cooked beans and the vegetable mixture in a large baking dish. Bake in the oven at 350°F for 30 minutes.
- Serve hot and enjoy!
