Ingredients

  • 2 cups dried white beans
  • 2 onions, chopped
  • 2 red bell peppers, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon dried red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Soak the beans in water overnight.
  2. Drain the beans and place them in a large pot. Cover with water and bring to a boil. Reduce heat and simmer for 1 hour, or until the beans are tender.
  3. In a separate pan, heat the vegetable oil and sauté the onions, peppers, and garlic until softened.
