Machboos (traditional Emirati Lamb Machboos)
Machboos is a traditional Emirati dish that is popular in the United Arab Emirates. Ingredients
- 2 cups basmati rice
- 500g lamb, cut into cubes
- 2 onions, finely chopped
- 4 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp machboos spice mix
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and cook until they are soft and translucent.
- Add the lamb cubes and cook until browned on all sides.
- Stir in the machboos spice mix and minced garlic, and cook for 2 minutes.
- Add the diced tomatoes and cook until they start to break down.
- Stir in the basmati rice and chicken broth, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
