Ingredients

  • 2 cups basmati rice
  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 4 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tbsp machboos spice mix
  • 4 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and cook until they are soft and translucent.
  3. Add the lamb cubes and cook until browned on all sides.
  4. Stir in the machboos spice mix and minced garlic, and cook for 2 minutes.
  5. Add the diced tomatoes and cook until they start to break down.
  6. Stir in the basmati rice and chicken broth, then bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork and serve hot.
