Ingredients

  • 2 cups basmati rice
  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons machbous spice mix
  • 1 teaspoon turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 4 cups chicken or lamb broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the minced garlic and cook for another minute, then add the lamb cubes and brown them on all sides.
  3. Stir in the machbous spice mix, turmeric, cinnamon, cardamom, cloves, and nutmeg, coating the lamb and onions with the spices.
  4. Add the diced tomatoes and cook until they begin to break down.
  5. Stir in the basmati rice, then pour in the chicken or lamb broth. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  7. Once the rice is cooked, fluff it with a fork and let it rest for a few minutes before serving.
