Maddi (groundnut Pudding)
Maddi, also known as Groundnut Pudding, is a popular dessert in Sierra Leone. This creamy and nutty pudding is made with groundnuts (peanuts) and is a delightful sweet treat for any occasion.
Ingredients
- 2 cups groundnuts (peanuts), shelled and roasted
- 1 cup sugar
- 1/2 teaspoon salt
- 4 cups water
Instructions
- In a blender, grind the roasted groundnuts until they form a smooth paste.
- In a large pot, combine the groundnut paste, sugar, salt, and water.
- Cook over medium heat, stirring constantly, until the mixture thickens to a pudding-like consistency, about 30 minutes.
- Pour the pudding into individual serving dishes and let it cool to room temperature.
- Refrigerate for at least 2 hours before serving.
