Madeira Cake

Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 4 eggs
- 200g self-raising flour
- Zest of 1 lemon
Instructions
- Preheat the oven to 180°C (350°F) and grease a loaf tin.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, adding a spoonful of flour with each egg.
- Gently fold in the remaining flour and lemon zest until just combined.
- Pour the batter into the prepared loaf tin and smooth the top.
- Bake for 1 hour or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
