Madeira Cake

Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 4 eggs
  • 200g self-raising flour
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf tin.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, adding a spoonful of flour with each egg.
  4. Gently fold in the remaining flour and lemon zest until just combined.
  5. Pour the batter into the prepared loaf tin and smooth the top.
  6. Bake for 1 hour or until a skewer inserted into the center comes out clean.
  7. Allow the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
