Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 cup coconut milk
  • 2 tomatoes, diced
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp curry powder
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, paprika, and curry powder.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the onions, garlic, and red bell pepper until softened.
  4. Add the diced tomatoes and cook for a few minutes until they start to break down.
  5. Return the chicken to the pot and pour in the chicken broth and coconut milk. Stir to combine all the ingredients.
  6. Simmer the stew for about 45 minutes, or until the chicken is cooked through and the flavors have melded together.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the madesu au lait de coco hot with rice or crusty bread.
