Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 cup coconut milk
- 2 tomatoes, diced
- 1 cup chicken broth
- 1 tsp paprika
- 1 tsp curry powder
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, paprika, and curry powder.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions, garlic, and red bell pepper until softened.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Return the chicken to the pot and pour in the chicken broth and coconut milk. Stir to combine all the ingredients.
- Simmer the stew for about 45 minutes, or until the chicken is cooked through and the flavors have melded together.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the madesu au lait de coco hot with rice or crusty bread.
