Ingredients

  • 2 cups coconut milk

  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper

  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced tomatoes, sliced bell pepper, tomato paste, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and bring the mixture to a simmer.
  5. Add the fish fillets to the pot, making sure they are submerged in the coconut milk mixture.
  6. Cover the pot and let the stew simmer for 20-25 minutes, or until the fish is cooked through.
