Madora Meatloaf (mopani Meatloaf)
Madora Meatloaf, also known as Mopani Meatloaf, is a traditional dish from Zimbabwean cuisine that features a unique and flavorful twist on the classic meatloaf.
Ingredients
- 1 cup dried madora (mopani worms)
- 1 lb ground beef
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup milk
- 1/4 cup chopped fresh parsley
- 1 tsp ground coriander
- 1 tsp ground cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Soak the dried madora in warm water for 30 minutes, then drain and chop them.
- In a large bowl, mix together the chopped madora, ground beef, onion, tomatoes, breadcrumbs, eggs, milk, parsley, coriander, cumin, salt, and pepper until well combined.
- Transfer the mixture to a greased loaf pan and press it down evenly.
- Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through.
- Let the meatloaf rest for 10 minutes before slicing and serving.
