Madora Meatloaf (mopani Meatloaf)

Ingredients

  • 1 cup dried madora (mopani worms)
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup chopped fresh parsley
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Soak the dried madora in warm water for 30 minutes, then drain and chop them.
  3. In a large bowl, mix together the chopped madora, ground beef, onion, tomatoes, breadcrumbs, eggs, milk, parsley, coriander, cumin, salt, and pepper until well combined.
  4. Transfer the mixture to a greased loaf pan and press it down evenly.
  5. Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through.
  6. Let the meatloaf rest for 10 minutes before slicing and serving.
