Madrid Magic Mushroom Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup diced mushrooms
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
  4. Add the mushrooms and cook until they release their moisture.
