Mae Mae Masala (breadfruit And Coconut Curry)
Mae Mae Masala is a traditional dish from Melanesian cuisine that features breadfruit and coconut curry. This flavorful and aromatic curry is a staple in many Melanesian households and is perfect for a hearty and satisfying meal.
Ingredients
- 1 large breadfruit, peeled and cubed
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the diced tomatoes and cook until they are soft and have released their juices.
- Stir in the turmeric, cumin, coriander, and paprika, and cook for 1-2 minutes until fragrant.
- Add the breadfruit cubes to the pot and stir to coat them with the spices.
- Pour in the coconut milk and water. Season with salt and pepper. Bring the curry to a simmer, then reduce the heat and let it cook for 30-40 minutes, or until the breadfruit is tender.
- Once the breadfruit is tender, taste the curry and adjust the seasoning if needed.
- Serve the Mae Mae Masala hot with steamed rice or roti.
