Ingredients

  • 1 large breadfruit, peeled and cubed
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  2. Add the diced tomatoes and cook until they are soft and have released their juices.
  3. Stir in the turmeric, cumin, coriander, and paprika, and cook for 1-2 minutes until fragrant.
  4. Add the breadfruit cubes to the pot and stir to coat them with the spices.
  5. Pour in the coconut milk and water. Season with salt and pepper. Bring the curry to a simmer, then reduce the heat and let it cook for 30-40 minutes, or until the breadfruit is tender.
  6. Once the breadfruit is tender, taste the curry and adjust the seasoning if needed.
  7. Serve the Mae Mae Masala hot with steamed rice or roti.
