Ingredients
- 1 kg pumpkin, peeled and cubed
- 200g fresh spinach, chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Boil the pumpkin in a pot of water until tender, about 15 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the spinach to the skillet and cook until wilted.
- Stir in the cooked pumpkin, cumin, cinnamon, salt, and pepper. Mash the mixture with a potato masher until smooth and well combined.
- Continue to cook for a few more minutes, stirring occasionally, until heated through.
- Adjust seasoning if needed and serve hot.
