Mafeteng Mashed Pumpkin With Spinach

Ingredients

  • 1 kg pumpkin, peeled and cubed
  • 200g fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Boil the pumpkin in a pot of water until tender, about 15 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the spinach to the skillet and cook until wilted.
  4. Stir in the cooked pumpkin, cumin, cinnamon, salt, and pepper. Mash the mixture with a potato masher until smooth and well combined.
  5. Continue to cook for a few more minutes, stirring occasionally, until heated through.
  6. Adjust seasoning if needed and serve hot.
