Ingredients
- 2 cups fresh spinach, chopped
- 1 cup grated cheese
- 1/2 cup milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 eggs
- Salt and pepper to taste
- 1/4 teaspoon nutmeg
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
- Gradually add the milk to the roux, stirring constantly until smooth and thickened.
- Remove the saucepan from the heat and stir in the cheese until melted. Let the mixture cool slightly.
- In a separate bowl, beat the eggs and then stir them into the cheese mixture.
- Add the chopped spinach, nutmeg, baking powder, salt, and pepper to the mixture and stir until well combined.
- Spoon the mixture into greased muffin tins, filling each cup about two-thirds full.
- Bake for 20-25 minutes or until the puffs are golden and puffed up.
- Remove from the oven and let the puffs cool for a few minutes before serving.
