Mafeteng Spinach And Cheese Puffs

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup grated cheese
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 eggs
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
  3. Gradually add the milk to the roux, stirring constantly until smooth and thickened.
  4. Remove the saucepan from the heat and stir in the cheese until melted. Let the mixture cool slightly.
  5. In a separate bowl, beat the eggs and then stir them into the cheese mixture.
  6. Add the chopped spinach, nutmeg, baking powder, salt, and pepper to the mixture and stir until well combined.
  7. Spoon the mixture into greased muffin tins, filling each cup about two-thirds full.
  8. Bake for 20-25 minutes or until the puffs are golden and puffed up.
  9. Remove from the oven and let the puffs cool for a few minutes before serving.
