Ingredients

  • 8 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the reserved mushroom stems.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the chopped mushroom stems and cook for 2-3 minutes.
  5. Stir in the chopped spinach and cook until wilted. Remove from heat.
  6. Stir in the crumbled feta cheese, and season with salt and pepper.
  7. Stuff the mushroom caps with the spinach and feta mixture.
  8. Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden on top.
  9. Serve hot and enjoy!
