Mafeteng Spinach and Feta Stuffed Mushrooms is a delicious and nutritious dish from the cuisine of Lesotho. These stuffed mushrooms are packed with flavor and make for a perfect appetizer or side dish.
Ingredients
- 8 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the reserved mushroom stems.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the chopped mushroom stems and cook for 2-3 minutes.
- Stir in the chopped spinach and cook until wilted. Remove from heat.
- Stir in the crumbled feta cheese, and season with salt and pepper.
- Stuff the mushroom caps with the spinach and feta mixture.
- Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden on top.
- Serve hot and enjoy!
