Ingredients
- 2 cups maftoul
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup pomegranate arils
- 1/4 cup olive oil
- 2 tablespoons pomegranate molasses
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large pot of boiling salted water, cook the maftoul according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked maftoul, cucumber, cherry tomatoes, red onion, parsley, mint, and pomegranate arils.
- In a small bowl, whisk together the olive oil, pomegranate molasses, lemon juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
