Maftoul Salad with Pomegranate Dressing (سلطة المفتول بصلصة الرمان)

Ingredients

  • 2 cups maftoul
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup pomegranate arils
  • 1/4 cup olive oil
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling salted water, cook the maftoul according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked maftoul, cucumber, cherry tomatoes, red onion, parsley, mint, and pomegranate arils.
