Ingredients
- 4 large bell peppers
- 1 cup maftoul (Palestinian couscous)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chickpeas, cooked
- 1/4 cup pine nuts
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the maftoul, onion, tomatoes, chickpeas, pine nuts, olive oil, cumin, paprika, salt, and pepper.
- Stuff the bell peppers with the maftoul mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
- Garnish with fresh parsley before serving.
