Maftoul Stuffed Bell Peppers (فلفل محشي بالمفتول)

Ingredients

  • 4 large bell peppers
  • 1 cup maftoul (Palestinian couscous)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup chickpeas, cooked
  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the maftoul, onion, tomatoes, chickpeas, pine nuts, olive oil, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the maftoul mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
  7. Garnish with fresh parsley before serving.
