Maftoul Stuffed Mushrooms (فطر محشو بالمفتول)

Ingredients

  • 1 cup maftoul
  • 8 large mushrooms, stems removed and reserved
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, cook the maftoul according to package instructions. Once cooked, set aside.
  2. Preheat the oven to 375°F (190°C).
  3. Chop the mushroom stems and sauté them with the onion and garlic in olive oil until softened.
  4. Add the cooked maftoul, diced tomato, and parsley to the mushroom mixture. Season with salt and pepper.
