Maftoul Stuffed Tomatoes (طماطم محشوة بالمفتول)
Maftoul Stuffed Tomatoes is a traditional Palestinian dish that combines the flavors of juicy tomatoes and savory maftoul, a type of Palestinian couscous. This dish is perfect for a light and flavorful meal.
Ingredients
- 4 large tomatoes
- 1 cup maftoul (Palestinian couscous)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup pine nuts
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and place them upside down on a paper towel to drain.
- Cook the maftoul according to the package instructions.
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the pine nuts, cooked maftoul, parsley, cumin, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 2-3 minutes.
- Stuff the tomatoes with the maftoul mixture and place them in a baking dish. Drizzle with a little olive oil.
- Bake for 20-25 minutes, or until the tomatoes are tender.
- Serve the stuffed tomatoes hot and enjoy!
