Ingredients

  • 4 large potatoes, boiled and mashed
  • 1 cup shredded mozzarella cheese
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup vegetable oil for frying
  • 1/2 cup roasted peanuts
  • 2 garlic cloves
  • 1/4 cup water
  • 1 tablespoon lime juice
  • 1/4 teaspoon red pepper flakes

Instructions

  1. In a large bowl, mix the mashed potatoes with the shredded mozzarella cheese. Season with salt and pepper.
  2. In a skillet, heat some oil over medium heat. Sauté the onion, bell pepper, and corn until softened. Season with cumin, paprika, salt, and pepper.
  3. Take a portion of the mashed potato mixture and flatten it into a disc. Place a spoonful of the sautéed vegetables in the center, then fold the potato over to encase the filling. Shape it into a patty and repeat with the remaining mixture.
  4. Heat the remaining oil in a skillet over medium heat. Fry the llapingachos until golden and crispy on both sides.
  5. For the peanut sauce, blend the roasted peanuts, garlic, water, lime juice, and red pepper flakes until smooth. Season with salt to taste.
  6. Serve the llapingachos with the peanut sauce drizzled on top.
