Magia De Llapingacho (llapingacho Magic)
Llapingacho is a traditional Ecuadorian dish made with mashed potatoes and cheese, formed into patties and then fried until crispy. This recipe adds a magical twist to the classic llapingacho by incorporating a flavorful filling of sautéed vegetables and serving it with a zesty peanut sauce. Ingredients
- 4 large potatoes, boiled and mashed
- 1 cup shredded mozzarella cheese
- 1 onion, finely chopped
- 1 bell pepper, diced
- 1 cup corn kernels
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup vegetable oil for frying
- 1/2 cup roasted peanuts
- 2 garlic cloves
- 1/4 cup water
- 1 tablespoon lime juice
- 1/4 teaspoon red pepper flakes
Instructions
- In a large bowl, mix the mashed potatoes with the shredded mozzarella cheese. Season with salt and pepper.
- In a skillet, heat some oil over medium heat. Sauté the onion, bell pepper, and corn until softened. Season with cumin, paprika, salt, and pepper.
- Take a portion of the mashed potato mixture and flatten it into a disc. Place a spoonful of the sautéed vegetables in the center, then fold the potato over to encase the filling. Shape it into a patty and repeat with the remaining mixture.
- Heat the remaining oil in a skillet over medium heat. Fry the llapingachos until golden and crispy on both sides.
- For the peanut sauce, blend the roasted peanuts, garlic, water, lime juice, and red pepper flakes until smooth. Season with salt to taste.
- Serve the llapingachos with the peanut sauce drizzled on top.
