Ingredients

  • 1 lb boneless chicken, cut into pieces
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup chicken broth
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup dried apricots
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, cinnamon, ginger, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and stir to scrape up any browned bits from the bottom of the pot. Return the chicken to the pot.
  4. Add the chickpeas and dried apricots. Bring the mixture to a simmer, then reduce the heat and cover. Let it simmer for 45-50 minutes, or until the chicken is cooked through and the flavors have melded together.
  5. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
