Mahi Shekam Por (persian Herb Stuffed Fish)

Ingredients

  • 4 whole fish, such as mahi mahi or sea bass
  • 1 cup chopped parsley
  • 1 cup chopped cilantro
  • 1 cup chopped dill
  • 1/2 cup chopped chives
  • 1/4 cup chopped tarragon
  • 1/4 cup chopped mint
  • 1/2 cup walnuts, chopped
  • 1/4 cup barberries (zereshk)
  • 1/4 cup pomegranate molasses
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Clean and gut the fish, leaving the head and tail intact. Make a few diagonal cuts on each side of the fish.
  2. In a bowl, mix together the chopped herbs, walnuts, barberries, pomegranate molasses, olive oil, salt, and pepper to create the stuffing.
  3. Stuff the herb mixture inside the cavity of each fish, then secure the opening with toothpicks.
  4. Heat some olive oil in a large skillet over medium heat. Place the stuffed fish in the skillet and cook for about 15 minutes on each side, or until the fish is cooked through.
  5. Once cooked, remove the toothpicks and transfer the fish to a serving platter.
