Mahón Cheese Croquettes

Ingredients

  • 2 cups Mahón cheese, grated
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1/4 teaspoon nutmeg
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
  2. Gradually whisk in the milk, stirring constantly, until the mixture thickens and becomes smooth.
  3. Stir in the grated Mahón cheese and nutmeg until the cheese is melted and the mixture is well combined. Season with salt and pepper to taste.
  4. Transfer the mixture to a shallow dish and refrigerate for at least 2 hours, or until firm.
  5. Shape the chilled mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
  6. In a deep skillet, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
