Mahón Cheese Croquettes

Ingredients
- 2 cups Mahón cheese, grated
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk

- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes to make a roux.
- Gradually whisk in the milk, stirring constantly, until the mixture thickens and becomes smooth.
- Stir in the grated Mahón cheese and nutmeg until the cheese is melted and the mixture is well combined. Season with salt and pepper to taste.
- Transfer the mixture to a shallow dish and refrigerate for at least 2 hours, or until firm.
- Shape the chilled mixture into small croquettes, then dip each croquette into the beaten eggs and coat with breadcrumbs.
- In a deep skillet, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.
