Mahshi Banadoura (assyrian Stuffed Tomatoes)
Mahshi Banadoura is a traditional Assyrian dish of stuffed tomatoes filled with a flavorful mixture of rice, herbs, and spices. This dish is a popular choice for family gatherings and special occasions.
Ingredients
- 6 large tomatoes
- 1 cup long-grain rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups vegetable broth
Instructions
- Cut the tops off the tomatoes and scoop out the flesh, leaving the shells intact. Sprinkle the insides with salt and set aside.
- In a large bowl, combine the rice, onion, garlic, parsley, mint, cumin, paprika, salt, and pepper. Mix well to combine.
- Stuff the tomato shells with the rice mixture, pressing gently to pack the filling.
- Place the stuffed tomatoes in a deep skillet or pot. Drizzle with olive oil and pour the vegetable broth around the tomatoes.
- Cover the skillet or pot and cook the stuffed tomatoes over medium heat for 45 minutes, or until the rice is fully cooked and the tomatoes are tender.
- Remove from heat and let the stuffed tomatoes cool slightly before serving.
