Ingredients

  • 6 large tomatoes
  • 1 cup long-grain rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups vegetable broth

Instructions

  1. Cut the tops off the tomatoes and scoop out the flesh, leaving the shells intact. Sprinkle the insides with salt and set aside.
  2. In a large bowl, combine the rice, onion, garlic, parsley, mint, cumin, paprika, salt, and pepper. Mix well to combine.
  3. Stuff the tomato shells with the rice mixture, pressing gently to pack the filling.
  4. Place the stuffed tomatoes in a deep skillet or pot. Drizzle with olive oil and pour the vegetable broth around the tomatoes.
  5. Cover the skillet or pot and cook the stuffed tomatoes over medium heat for 45 minutes, or until the rice is fully cooked and the tomatoes are tender.
  6. Remove from heat and let the stuffed tomatoes cool slightly before serving.
