Ingredients

  • 8 large onions
  • 1 cup rice
  • 1 lb ground beef
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 2 cups vegetable broth

Instructions

  1. Peel the onions and carefully hollow out the centers, leaving a few outer layers intact.
  2. In a bowl, mix the rice, ground beef, cumin, paprika, cinnamon, parsley, salt, and pepper.
  3. Stuff the hollowed-out onions with the rice and beef mixture.
  4. Place the stuffed onions in a pot and pour the vegetable broth over them.
  5. Cover the pot and simmer for 1 hour, or until the onions are tender and the filling is cooked through.
