Mahshi Batata (iraqi Stuffed Potatoes)

Ingredients

  • 4 large potatoes
  • 1 cup long-grain rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash the potatoes and carefully scoop out the flesh, leaving a thick shell. Reserve the potato flesh for later use.
  3. In a large bowl, combine the rice, ground meat, onion, tomatoes, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well to combine.
  4. Stuff the hollowed-out potatoes with the rice and meat mixture, pressing gently to pack the filling.
  5. Place the stuffed potatoes in a deep baking dish and drizzle with olive oil. Pour the chicken or vegetable broth into the dish around the potatoes.
  6. Cover the dish with foil and bake in the preheated oven for 45 minutes to 1 hour, or until the potatoes are tender and the filling is cooked through.
  7. Remove the foil and bake for an additional 10-15 minutes to allow the tops of the potatoes to brown slightly.
  8. Garnish with fresh parsley before serving.
