Mahshi (couscous-stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup couscous
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup raisins
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 1/2 cups vegetable broth

Instructions

  1. In a large bowl, combine the couscous, onion, tomatoes, raisins, parsley, cilantro, garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Stuff the bell peppers with the couscous mixture and place them in a deep skillet or pot.
  4. Drizzle the stuffed peppers with olive oil and pour the vegetable broth into the skillet.
  5. Cover the skillet and cook the peppers over medium heat for 30-35 minutes, or until the peppers are tender and the couscous is cooked.
  6. Once cooked, remove the peppers from the skillet and place them on a serving platter.
  7. Drizzle the cooking liquid from the skillet over the stuffed peppers before serving.
