Mahshi (couscous-stuffed Bell Peppers)
Mahshi is a traditional Berber dish featuring bell peppers stuffed with flavorful couscous. This dish is a delightful combination of savory and aromatic flavors that will transport you to the heart of Berber cuisine.
Ingredients
- 4 large bell peppers
- 1 cup couscous
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup raisins
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 1/2 cups vegetable broth
Instructions
- In a large bowl, combine the couscous, onion, tomatoes, raisins, parsley, cilantro, garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Stuff the bell peppers with the couscous mixture and place them in a deep skillet or pot.
- Drizzle the stuffed peppers with olive oil and pour the vegetable broth into the skillet.
- Cover the skillet and cook the peppers over medium heat for 30-35 minutes, or until the peppers are tender and the couscous is cooked.
- Once cooked, remove the peppers from the skillet and place them on a serving platter.
- Drizzle the cooking liquid from the skillet over the stuffed peppers before serving.
