Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, finely chopped
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems and sauté them in a pan with olive oil, onion, and garlic until softened.
  3. In a bowl, combine the cooked rice, sautéed mushroom stems, chopped tomato, parsley, cilantro, cumin, paprika, cinnamon, salt, and pepper.
  4. Stuff each mushroom cap with the rice mixture and place them in a baking dish.
  5. Bake for 25-30 minutes until the mushrooms are tender.
