Mahshi Fawakeh (iraqi Stuffed Mushrooms)
Mahshi Fawakeh is a traditional Iraqi dish of stuffed mushrooms that are bursting with flavor. This recipe combines a variety of spices and herbs to create a delicious and aromatic dish that is perfect for sharing with family and friends.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, finely chopped
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Finely chop the mushroom stems and sauté them in a pan with olive oil, onion, and garlic until softened.
- In a bowl, combine the cooked rice, sautéed mushroom stems, chopped tomato, parsley, cilantro, cumin, paprika, cinnamon, salt, and pepper.
- Stuff each mushroom cap with the rice mixture and place them in a baking dish.
- Bake for 25-30 minutes until the mushrooms are tender.
