Mahshi Fawakeh (saudi Arabian Stuffed Mushrooms)
Mahshi Fawakeh is a traditional Saudi Arabian dish that features delicious stuffed mushrooms. This recipe is a perfect combination of savory flavors and aromatic spices, making it a popular choice for appetizers or side dishes.
Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped cilantro
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced tomato, chopped parsley, and cilantro to the skillet. Cook for 2-3 minutes, then stir in the cooked rice, ground cumin, ground coriander, salt, and pepper. Remove from heat and set aside.
- Preheat the oven to 375°F (190°C).
- Brush the mushroom caps with the remaining olive oil and place them on a baking sheet.
- Fill each mushroom cap with the rice mixture and place the reserved mushroom stems on top.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is heated through.
- Serve the Mahshi Fawakeh hot and enjoy!
