Mahshi Fawakeh (saudi Arabian Stuffed Mushrooms)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced tomato, chopped parsley, and cilantro to the skillet. Cook for 2-3 minutes, then stir in the cooked rice, ground cumin, ground coriander, salt, and pepper. Remove from heat and set aside.
  3. Preheat the oven to 375°F (190°C).
  4. Brush the mushroom caps with the remaining olive oil and place them on a baking sheet.
  5. Fill each mushroom cap with the rice mixture and place the reserved mushroom stems on top.
  6. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is heated through.
  7. Serve the Mahshi Fawakeh hot and enjoy!
